Works for Me Wednesday - Backwards Edition!



Today it's Works for Me Wednesday: The Backwards Edition! This means I get to ask you for tips on my dilemma. What is my dilemma? I'm so glad you asked.

I want to incorporate more bean and rice dishes into our meal plans because they are not only healthy, but frugal. However, warmer days are coming, so I'd like to skip the soup and opt for summer friendly recipes.

I'd love for you to share your favorite/best recipes for bean and rice dishes (can be together or separate) that are especially wonderful when it's HOT outside. :)

Oh my. Most of mine are soup/stew/curry/chili related... but I do make yummy "Dirty Beans and Rice" that I wrap up in whole wheat tortillas with shredded lettuce, cold guacamole, salsa, and lime juice. That's pretty summery!

For summer, black bean salad is yummy. Google for specific recipes but in a nutshell it's black beans, corn, chopped onion, chopped tomato, cilantro . . . yummy!

Hummus, either the normal w/ garbanzos or you can make it w/ black beans & such too, is another yummy "bean" recipe that's good year round.

We like a lot of Mexican type foods- so beans in a tortilla (you can add rice into that too!). I often serve beans as a side dish with seasonings added in. I make Mexican rice quite a bit too.
I also make a Black bean and Corn Salad that is very good too. It's something like this one-

I also like to make Fried Rice with vegetables. That's really good! But I don't have a recipe for it.

I have the ingredients for Hummus but haven't tried it yet. Maybe I'll get ambitious and bring it tomorrow!

Get Rita Bingham's book "Country Beans". I never knew there were so many ways to use beans. She has everything from snacks to desserts. It is a great cookbook and even comes with hilarious cartoons of beans.

as usual, I'm late to the backwards day party.

I have two favorite bean recipes.
The first I found via Everyday Food and it is for Bean burritos. They're really yummy and use pinto beans and rice (I opt for brown rice). do a search on martha's website for Bean Burritos.
The second is a Black bean and corn salsa. I could seriously eat this everyday during the summer, it is so incredibly good.

I see someone else mentioned a recipe like it, but try that one, man is it good! so healthy, too!

We make rice and beans the traditional way then prepare them as burritos and eat them up! Yum! Much cheaper than making them with meat.
